Taco Tuesday is coming up and you want to impress your friends with something extra to stand out from the regular taco crowd. These vegan avocado and corn quesadillas will do the trick. Not only are they ridiculously easy to make, they taste like heaven!
With only 7 ingredients, and almost all of them are staples you have at home, these quesadillas can be made in no time!
Traditionally, a quesadilla is filled with cheese, meat, and salsa. Sure, you can go ahead and add some grated vegan cheese to these quesadillas as well, but I recommend you to taste them without it first. When the flour tortillas get heated and turn a little crispy the avocado tastes even more! The corn adds a sweet buttery flavour to the dish.

The ingredients list is short; Flour tortillas, avocados, corn, garlic, lime, coriander and chilli, are ingredients you most likely already have at home.
How to make avocado and corn quesadillas
Just go on and mash all the ingredients, except the tortillas of course, and add salt & pepper to taste. Take one tortilla and cover it with your newly made mash. Take another tortilla and put it on top. Fry it in a dry skillet until it is golden brown, then flip it over and fry on the other side.
Cut it and serve it immediately. Great tasting dishes don’t always have to be more complicated than this.

A perfect addition to your taco Tuesday table! Everybody will go nuts of these avocado and corn quesadillas.
- 4 tortilla bread
- 1 can corn
- 1/2 red chilli
- 2 avocados ripe
- 1 bundle coriander fresh
- 3 garlic cloves
- 1 tbsp lime juice
Mince the garlic and chilli and put it in a bowl.
Add the rest of the ingredients and mash it together with a fork or potato stomp.
Taste with salt & pepper.
Take a tortilla bread and scoop up half of the avocado mash and spread it evenly.
Take another tortilla bread and put on top.
Heat up a skillet and fry the tortilla until it is golden brown, then flip it over and fry on the other side.
Cut it and sprinkle some chilli and coriander over it and serve immediately.
