Bulgur is an underutilized ingredient and you should make sure to always have some at home. It’s rich in manganese, magnesium, iron and also has a good amount of protein as well as a good dose of dietary fibre that will boost your digestive and heart health. This was the first time I attempted to make porridge out of it though, but the result was a rich, creamy bulgur porridge and it made the start of my day great!
Porridge is a great breakfast dish, it fills you up and you can throw almost any fruit or nut on it making it a great and healthy start to your day. If you rather have some jam or curd on top I can recommend this Quick and Easy Blueberry Raspberry Jam. In the picture, I have used banana, apple and cinnamon as toppings but feel free to experiment to make it suit your taste.
You can use whichever plant-based milk you want, I used soy for this but you could switch it for oat, almond, rice or the one you think taste best. Keep in mind though that a lot of plant-based milk has added sugar so if you want to keep your sugar levels as low as possible (why wouldn’t you?) be sure to get the ones that are unsweetened.
- 4 tbsp bulgur
- 1 dl (1/4 cup) water
- 1 dl (1/4 cup) soy milk unsweetened
- 4 dates
De-seed the dates (if they aren’t already) and cut them into small pieces.
Put all ingredients in a saucepan and bring to a boil.
Lower the heat and simmer until all liquid is absorbed by the bulgur.
Serve immediately with some unsweetened soy milk and fresh fruit and some cinnamon.
