I’ve tried this Lebanese Olive Salad as a side dish to my falafel, I have brought it to “bring and shares”, and it has been a standing addition whenever I’m having a barbeque. It is so versatile that either way you choose to use it, you will not be disappointed.
The natural saltiness of the olives combined with the cumin really helps to bring out the flavour in this salad, and I can see myself (without ever being there) indulge it in a warm and cosy restaurant in Lebanon.
There’s really something with food from the Middle East, it could be the way you eat it, or all the different flavours, or the combination of all small dishes. Either way, I just love it, as I love all food that includes a lot of flavours and spices. Maybe this is a late rebellion against the sorry to say, sometimes very bland tasting Swedish food, or just that my taste buds crave more and more flavour. They want moooaaaare! And when they do, they will be really satisfied with this salad.
So be sure to make this salad a part of your cooking routine, it will not only impress your taste buds but your friends as well.
Be sure to get some good quality olives when making this salad, some canned olives can really be substandard.
- 250 g green olives with pimento
- 1 red onion
- 1 yellow pepper
- 1/2 cucumber
- 1-2 tomatoes
- 3 garlic cloves
- 1 dl (1/4 cup) parsley
- 1 tsp cumin
- 1 tsp sea salt
- 1/2 lemon (the juice)
- 1 dl (1/4 cup) olive oil extra virgin
- Black pepper
Mince the olives, onion, capsicum, cucumber, garlic and parsley and put everything in a bowl.
Add lemon juice, olive oil and spices and mix everything gently. Taste and add more salt and pepper if necessary.
