De-seed the dates (if they aren’t already) and cut them into small pieces.
Put all ingredients in a saucepan and bring to a boil.
Lower the heat and simmer until all liquid is absorbed by the bulgur.
Serve immediately with some unsweetened soy milk and fresh fruit and some cinnamon.
