This gnocchi recipe is the perfect comfort food recipe. It's quick, easy and you probably already have most of the ingredients at home.
Clean and peel the potatoes and boil them in a large saucepan until they are soft.
In the meantime mince the onion and garlic and fry in a large frying pan until soft and translucent.
Add the crushed tomatoes, maple syrup, salt & pepper and let simmer for about an hour, stirring occasionally.
Mash the potatoes and knead in the flour to create a dough.
Roll out the dough into strings that are about as thick as a finger.
Cut the strings in 2cm (~ 1 inch) pieces.
Bring water to a boil in a large saucepan and boil 10 gnocchis at a time. When they float up to the surface, they are done.
Add the gnocchi to the tomato sauce and make sure they are all covered.
Dash a bit of vegan cream on top and sprinkle with some herbs (optional).
Top with some fresh herbs and serve immediately.
