A perfect addition to your taco Tuesday table! Everybody will go nuts of these avocado and corn quesadillas.
Mince the garlic and chilli and put it in a bowl.
Add the rest of the ingredients and mash it together with a fork or potato stomp.
Taste with salt & pepper.
Take a tortilla bread and scoop up half of the avocado mash and spread it evenly.
Take another tortilla bread and put on top.
Heat up a skillet and fry the tortilla until it is golden brown, then flip it over and fry on the other side.
Cut it and sprinkle some chilli and coriander over it and serve immediately.
